Ingredients
  • 1 cup cashews
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 small garlic cloves
Instructions
  1. Soak cashew in water overnight or for at least 2 hours. 

    If you have a high-speed blender, you may skip this step.
  2. Drain cashews and discard the water.

  3. Put all ingredients in the blender and blend until smooth.

    Add extra water to achieve a thinner consistency.
  4. Serve immediately with plant-based salad or another dish of your choice.

  5. Store any leftover dressing in an air tight container in your fridge to up to 5 days.

    The dressing will continue to thicken over time, so you may need to add a splash of water to thin the dressing.
